It was sunshine, laughs
and pasta all the way!

Guests arrived from Sydney, Chicago, London and Gloucestershire to stay at Castello dell'Aquila for five fun packed days in the heart of Lunigiana. Candle lit dinners were enjoyed in the courtyard of the castle beneath the stars, lunches in the cool grotto, the impressive medieval salone and overlooking the Golfo dei Poeti.
Local chef introduced clients to local Lunigianese specialities learnt from his grandmother including torta di patate e zuccchini (potato & courgette tart) & fritelle di castagna con ricotta (chestnut flour fritters with ricotta).
British chef and food writer Maxine Clark demonstrated numerous fine culinary specialities such as cacciucco (Livornese fish stew), maiale alle olive (loin of pork and olives) and gnocchetti di castagna con crema di pinoli e maggiorana (chestunt baby dumplings with pine nut & marjoram sauce). |
"It was so good to meet you last weekend and I just wanted to say a big thank you for all your hard work in making our weekend fantastic. Everything was wonderfully organised and great fun." |
Much amusement was had in the kitchen producing fresh pasta including delicious pansotti (ravioli filled with herbs & greens) and at Casa Glyn the outdoor wood oven was used for producing farinata (chick pea flatbread) & sardiniera (Ligurian style focaccia with tomatoes & salted anchovies or sardines) accompanied by local vino and a relaxing dip in the pool afterwards.
There was also a trip to the fabulous market at La Spezia with breakfast in a local bar, as well as a visit to family owned Ca'Lunae for a wine tour & tasting with lunch by the sea at Ciccillo's beneath the Castle at Lerici. Local guests were invited to the final evening's dinner with medieval Duello (duel with swords) and some very fine karaoke! |

Even the journey back to Pisa airport was more than just a journey with an outstanding seafood lunch at Ciccio's - renowned dining spot at Bocca di Magra since the 1950s - before final farewells at the airport.
