Merrion’s Lunigiana cookery course is a truly authentic Italian experience and the only course of its kind in this region of Italy. Ingredients, recipes and traditions here are held onto proudly with influences from the mountains and the nearby coast and combine Tuscan with Ligurian.

Using local Italian chefs including Simone Tomei from Lucca and Enrico Fiorentini from Sarzana, Merrion’s courses provide authenticity and flair as guests learn to cook dishes which have been handed down through the generations instead of complicated and time consuming fancy recipes which are not typical of Italy! For Italians, food and cooking is in the ‘soul’ and it’s all about sourcing ingredients and understanding regional differences. Using local Italians to teach, guests can have a really genuine and magical experience and go home satisfied. …after all, for Italians the most important part of daily life is cooking and eating! There is also the opportunity to learn about which wines to accompany which dishes and Enrico is an expert in this field as well as the art of cooking fish and seafood whilst Simone will teach guests all sorts of specialities from Lucca and the surrounding hills.
Merrion believes in a relaxed approach to food, and that cooking and eating should be a shared, fun experience. Clients are invited to come as individuals and couples or to make up their own group thus providing the opportunity to create their own tailor made long weekend or full week with Merrion. Cookery Courses at Castello dell’ Aquila are fun, relaxing, professional and inspirational. The very best ingredients are sourced and meals are enjoyed together as a group with the chance for even the least confident cook to come away inspired and encouraged.

Alternatively, nearby is Merrion’s own house, Casa Glyn, where anyone who takes the property for their holiday can enjoy the luxury of private teaching at the villa with its stunning views, wonderful and well equipped kitchen and even a pizza oven! A full day (or more) can be spent with Simone Tomei learning to cook all sorts of delicious dishes such as Luccese soups, rabbit with olives, focaccia, home made ragu and much more! Dining on the terrace with some good wine after sourcing the ingredients and creating sumptuous Tuscan dishes is a real joy.
